Plok (SNES)
Plok to many is the culmination of the Follin brothers' already very impressive work on the SNES, with audio engineering assistance by Alberto J. González (best known for his great 8-bit soundtracks). There's a rumour that Shigeru Miyamoto was so impressed by this OST when the game was presented to him that he thought it must've been using additional sound hardware. While that isn't confirmed anywhere, there is sourced info that he was very interested in working on the game, but ultimately decided against it, and famous Rare composer David Wise has cited the OST as a big infuence on his work for the DKC series.
Besides being one of the best in terms of clarity, dynamics, stereo mixing and punch, with a warm and thick low end, the OST defies more expectations with its unusual tricks used to achieve modulation-style effects (heard in the Beach theme intro for example), and sampling whole chords and playing them back on single channels to make the most out of the eight channel chip. Stylistically the music is often similar to the Spider-Man game from 1992 and their previous prog rock-style 8-bit works (there's also a throwback to these in some arpeggio chords), though there's also a big focus on upbeat and often lighthearted folk tunes making extensive use of harmonica, steel-string acoustic guitar, xylophone and low brass in a way that might remind you of the later Banjo games.

Midway's switch to sample-based music introduced the DMA-driven DCS Sound System and it was an absolute beast at the time, with sound that was sometimes indistinguishable from CD audio OSTs of the 90s. Going from MK1's mono to full stereo, clear vocal samples and the longer samples of guitar melodies with varied timbres in some tracks was a huge step up in sound design for the series, which arguably started off sounding quite good already due to its crisp and punchy drum samples and beat focus along with stabby chorused leads making good use of the YM2151 chip's ability to sound strange, cold and menacing.
MKII is very much a "same thing but bigger and better" kind of sequel and that includes the music. While the agressive, mostly beat-driven compositions aren't something I tend to listen to often outside of the game as too many are basically boss themes, they suit it incredibly well. The OST also retains some of its FM roots with sampled synths with additional effects applied to them in The Portal and Last Stand. Previously used tracks such as The Temple Gate, The Cavern and The Bridge actually sound more like remasters than proper remakes in the style of the new tracks.

"War! Never been so much fun!" The main theme here is both a great piece of satire (which somehow was deeply misunderstood in the UK at the time) and a technical achievement on the Amiga with its full vocal track, scratching elements, strong percussion and thick low end. If you listen closely or mute the other channels you can hear how it's spliced up into many different samples unlike in the later redbook release. Meanwhile the sad and heroic recruitment theme helps drive home the anti-war message of the game, with the simple cutscene showing the graves of fallen soldiers (who were named and could gain experience, simple but effective ways to give the game some emotional weight) being added while the new recruits pour in, and the intermission theme portrays the hollywood-like expectations of getting to kick ass that they have before going into the battlefield. Great stuff.

Plok (SNES)
Plok to many is the culmination of the Follin brothers' already very impressive work on the SNES, with audio engineering assistance by Alberto J. González (best known for his great 8-bit soundtracks). There's a rumour that Shigeru Miyamoto was so impressed by this OST when the game was presented to him that he thought it must've been using additional sound hardware. While that isn't confirmed anywhere, there is sourced info that he was very interested in working on the game, but ultimately decided against it, and famous Rare composer David Wise has cited the OST as a big infuence on his work for the DKC series.
Besides being one of the best in terms of clarity, dynamics, stereo mixing and punch, with a warm and thick low end, the OST defies more expectations with its unusual tricks used to achieve modulation-style effects (heard in the Beach theme intro for example), and sampling whole chords and playing them back on single channels to make the most out of the eight channel chip. Stylistically the music is often similar to the Spider-Man game from 1992 and their previous prog rock-style 8-bit works (there's also a throwback to these in some arpeggio chords), though there's also a big focus on upbeat and often lighthearted folk tunes making extensive use of harmonica, steel-string acoustic guitar, xylophone and low brass in a way that might remind you of the later Banjo games.

Midway's switch to sample-based music introduced the DMA-driven DCS Sound System and it was an absolute beast at the time, with sound that was sometimes indistinguishable from CD audio OSTs of the 90s. Going from MK1's mono to full stereo, clear vocal samples and the longer samples of guitar melodies with varied timbres in some tracks was a huge step up in sound design for the series, which arguably started off sounding quite good already due to its crisp and punchy drum samples and beat focus along with stabby chorused leads making good use of the YM2151 chip's ability to sound strange, cold and menacing.
MKII is very much a "same thing but bigger and better" kind of sequel and that includes the music. While the agressive, mostly beat-driven compositions aren't something I tend to listen to often outside of the game as too many are basically boss themes, they suit it incredibly well. The OST also retains some of its FM roots with sampled synths with additional effects applied to them in The Portal and Last Stand. Previously used tracks such as The Temple Gate, The Cavern and The Bridge actually sound more like remasters than proper remakes in the style of the new tracks.

"War! Never been so much fun!" The main theme here is both a great piece of satire (which somehow was deeply misunderstood in the UK at the time) and a technical achievement on the Amiga with its full vocal track, scratching elements, strong percussion and thick low end. If you listen closely or mute the other channels you can hear how it's spliced up into many different samples unlike in the later redbook release. Meanwhile the sad and heroic recruitment theme helps drive home the anti-war message of the game, with the simple cutscene showing the graves of fallen soldiers (who were named and could gain experience, simple but effective ways to give the game some emotional weight) being added while the new recruits pour in, and the intermission theme portrays the hollywood-like expectations of getting to kick ass that they have before going into the battlefield. Great stuff.
